lazy daisy thursdays

Today was all about cake. One of the grade 9 boys gave me the recipe for a “Lazy Daisy Cake” with a very short baking time (only 30 minutes) so I thought it was something worth trying.

It was worth it.

Ingredients
2 eggs
1 scant cup of sugar
1 cup flour
pinch of salt
1 tsp baking powder
1 tbsp butter
1/2 cup milk

Preheat oven to 350.

Beat eggs until light and fluffy; add sugar, beat well. Add flour, salt and baking powder. In a saucepan bring milk and butter to a boil. Fold into mixture.

Bake in a greased 8x8 pan for 30 minutes.

Topping (this makes the cake)
1/2 cup brown sugar
1/2 cup coconut
3 tbsp milk
3 tbsp butter

Add the sugar, coconut, milk and butter to a small saucepan. Bring to a boil and spread on cake. Put the cake back in oven for a few minutes until the topping bubbles slightly and browns.
